Oven-Baked Frito Pie

This is a recipe that I don't make very often (for obvious reasons). It is a treat for the boys as they LOVE Frito Pie. :)



Ingredients:
1 lb. lean ground beef
1 can (16 oz) chili beans (do not drain)
1 can (8 oz) tomato sauce
1 can (15 oz) diced tomatoes (drained)
1 envelope low sodium taco seasoning
1 cup shredded cheddar cheese (2% fat kind)
3 1/2 cups corn chips (Fritos)
1 1/4 cup fat free sour cream

Directions:
Cook ground beef until meat is browned; drain. Stir in beans, tomato sauce, diced tomatoes, taco seasoning mix and 1/4 c. of cheese. Sprinkle 1 cup corn chips in bottom of 8x8 baking dish. Cover with chili. Bake at 350 for 20 minutes. Spread sour cream over chili. Top with remaining corn chips and cheese. Bake 4-5 minutes longer.

Makes 6 to 8 servings

I've had something similar that's just as tasty. Make the chili recipe and pour into a small bag of frito chips. It's great to sell at school functions, baseball games,etc and easy to walk around eating it. Looking forward to trying this recipe.

You list tomatoes in the ingredients list but not in the recipe...assuming you add them in with the beans, etc?!?!?

Mother always made this on a cold winter day. She put a little chili in the bottom of the casserole, then a layer of Fritoes, a layer of thinly sliced onions, a layer of chili, and then did that layering one more time, topped with cheddar cheese. We do not do beans and chili in Texas!!! Others do, so whatever works for you, works!! Baked about 20 minutes at 350, it was a delicious meal (which I, of course, topped with ketchup!!)

My mother baked this on cold winter nights. It consisted of layers of chili, Fritoes, thinly sliced onions, chili, (2 layers) and then the topping was grated cheddar cheese. Baked about 20 minutes at 350 degrees, and of course, I topped it with lots of ketchup before I ate it! My theory was that all chili has to have ketchup! That's my story and I'm sticking to it! LOL!!

It's raining COLD rain in December here in Missouri, so my 7yr old daughter and I decided to try this out tonight. Verdict: Unanimous decision excellent! Hubby said he wants it for left over lunch, and has asked to make this a regular in our menu routine. Thank you for the post, love love LOVE IT!

The picture shows a 9x13 pan. Will that in place of an 8x8? Thanks.

The picture actually has a 6x11 pan, not a 9x13. A 9x13 would be a bit too large.

An 8x8 pan was much too small for this recipe, IMO. Since I only have a family of three to feed, I'll probably half this next time. Other than that, great recipe!

I followed this recipe tonight! It SMELLS good. It's still in the oven so I haven't gotten to eat it yet. I have three boys and other on the way plus a husband, and they all LOVE to eat, so this is great. Quick and easy. Although I didn't read these comments before making it so I didn't drain the beans and tomatoes... but I don't think it will mess with the taste of it. Thanks.

This recipe is just devine it taste just like dorito pie only theres more of it to enjoy. I have a similar recipe which uses crushed doritos and it taste the same but this one is easier to make I think. I know im making this soon with my 14 year old son who just loves dorito pie.

Just checking is the sour cream to be served on top when serving?

After you cook it the first time, you spread the sour cream on top, then top with the rest of the Fritos and cheese, and cook for 5 more minutes. Hope that makes sense.

I just made it.... haven't tried it yet. While I was letting it cool off I realized I forgot the taco seasoning :( . I really hope this doesn't ruin the whole thing!

what's the obvious reason for not making this often? Is it the fritos?

Laura, it's because it's a VERY unhealthy recipe. High sodium, high calorie, high fat. Not my typical kind of recipe.

I am making this tonight. Instead of plain fritos, I am using the chili cheese kind. Also leaving out the beans since we are not fan of beans. Still, I'm sure it will come out great :)

I made this tonight and it was DEEEE-LICIOUS! I did use a packet of Chili seasoning instead of the Taco seasoning! I also did not see in the directions (only in the comments) to drain the beans and tomatoes, so I did not do that...but I thought it still turned out great! Thanks for a easy and yummy recipe :)

I'm going to try to make this with Laura's lean beef, add in onion and peppers, and use reduced-fat saltines instead of fritos. Should help with the healthy!

Will it work if I double the recipe and use a 9x13 pan? I'm kitchen challenged!

I actually make it in an 11x7 pan. I think you could probably double and put in a 9 x 13, but it will be full.

I made this today for lunch and it was great! Followed the directions exactly and it fit just fine in my 8x8 glass Pyrex dish. I've had a recipe like this before, but with canned chili. Believe me, it was MUCH better with homemade ingredients ;-)

This is the best recipe ever!! I actually added a few diced green chilies to it. I also used diced tomatoes that were roasted with garlic and onions(in a can). Delish! Next time I'm going to add a little can of black olives to it! Thanks so much for the recipe!!! :D
