Bacon, Mushroom and Spinach Fritatta

This is a very filling, very yummy breakfast. :)




Ingredients:
2 eggs
1/2 cup fresh spinach, chopped
2 large fresh mushrooms, chopped
1 oz. reduced fat sharp cheddar cheese
1 slice Oscar Mayer center cut bacon, cooked and diced

Directions:
Preheat oven to 450. Spray a small nonstick skillet with cooking spray and preheat pan. Add mushrooms and spinach and saute until spinach wilts. Whisk eggs and add to pan. Add bacon. Cook until partially set. Sprinkle cheese on top. Finish cooking in oven at 450 for 5 minutes.
